A Quick Note on Storing Canned Goods

When canning, the rings keep the lids on during the processing & cooling of the products.

But, once cooled, and ready to go into the pantry, take the rings off, and here are the reasons why:

( 1 ) When done by the recipe, the lids will usually seal correctly.  However, if there is a food or juice particle on the rim of the jar, the            seal may not last.  So, the lid can start to lift off of the jar.  If this happens, the contents can become contaminated and unsafe to          eat.

( 2 ) If the ring is left on in storage, the ring will hide the fact that there is a defective seal, so you could be eating unsafe food.

( 3 ) If the ring is taken off for storage, you can actually see if a lid has lifted, and then dispose of the contents appropriately.

( 4 ) The lids should keep the food safe for up to 18 months - according to Ball & Kerr product marketing.  The rings themselves could            rust in that amount of time, and become unappetizing to look at.  But storing the rings keeps them from rusting, so they could be          used more frequently and you don't have to keep buying rings, just the lids.  I bought rings & lids yesterday, as well as just lids.              The wide mouth lids & rings were $8.97 for a box of 12, where the lids only were $4.97 for a box of 12.  The regular mouth were              $6.47 and $3.97 respectively. 

Harvesting

Everyone loves to harvest !  This is Emilie & Jake & Luke ! 

They harvested eggplants, okra, bell peppers, jalapenos, & tomatoes !

Start with only the healthiest of plants

Harvest unblemished fruits for preserving, prepare & can daily for the freshest & tastiest goodies imaginable !!

The Fig Trees ! 

 

These trees gave enough fruit to make almost 200 jars of Fig Jam & Topping this year !!  And they are wonderful to eat right off the tree !!  ( We do not use pesticides )

And - Ducky absolutely LOVES Figs !!  But she snatches them

                                                           right off my hand and eats

                                                           them so fast, all you can see

                                                           is her chewing her fig !

Healthy Plants   =   Great Pollination !!

Here are the Rosemary Bushes !!

W A I T   !!!   Look closely at the picture on the left, you will see two Bumble Bees !!    WOW !!

There were probably 10 of them on this bush !!  I managed to get a closeup of one of them today !   They are SO happy pollinating the Rosemary !!
